AQUITAINE in south-west France has a long history of caviar production based on the European sturgeon Acipenser sturio, and is now a significant producer again thanks to aquaculture and a group of French pioneers, reports TOM WRAY.

Since 1995, the French companies Sturgeon SCEA, Ecloserie de Guyenne and, more recently, Caviar et Prestige have combined to rear the Siberian sturgeon Acipenser baerii and to produce and distribute Caviar d Aquitaine and other high quality sturgeon products.

The sturgeon fishery in the Gironde estuary used to be of some importance, but by 1980 only 20kg of caviar was produced.
