ONE OF EUROPE'S biggest caviar producers - French farming company Sturgeon SCEA - is expanding its operations from five to seven farms.
"The demand for farmed caviar is increasing, and last year we could probably have sold twice as much we produced, " managing director Dr Alan Jones tells FFI.
Sturgeon's new farms are to the south-east of Bordeaux, and Dr Jones expects them to increase caviar production capacity by about three tonnes a year.
"Our objective is to be producing 12 tonnes a year by 2010 - that's quite a lot of caviar when packed in 30g tins!" he says.
