Just outside of Lexington, Kentucky, Alltech is growing commercial-grade tilapia, selling all of its harvested live product to Asian fish markets in the area, as well as some local restaurants.

Although production is minimal compared to the rest of the industry, growing roughly 15 metric tons a year, the company has plans to increase its harvesting potential, possibly as soon as next year with an additional farm in Eastern Kentucky.

Vaun Cummins, Alltech’s senior aquaculture technician, who joined the company several months ago, says the initial model for Alltech’s farm has the potential to grow “as much fish as we want.”

Using
