With roughly half of US smoked fish giant Acme's revenue coming from cold smoked salmon, the company's 65,000-square-foot flagship plant in Brooklyn wasn't able to accommodate the company's growth trajectory.

So when the group broke ground for the plant in Wilmington, North Carolina in 2013, it did so with its eye on the future -- both on new clients, and on new food safety initiatives to help it avoid issues such as Listeria, which can be devastating to US producers.

Gabriel Viteri, VP of strategy and business development at Acme Smoked Fish Corporation, talked us through the new facility, and what makes it so unique.
