‘The pole and line fish gets frozen one at a time, whereas the purse seine caught fish are caught in a large load, so it takes time for them to get frozen.’

Pole and line caught tuna is hooked, then thrown live into tanks filled with -20 deg C brine. After it has been frozen, it is then frozen again down to -50 deg C.
