Smoked trout is becoming a serious contender to smoked salmon in France with annual sales now running to 4,860 metric tons, LSA reports.

Following negative publicity about farmed salmon production methods, smoked salmon sales fell 20 percent between 2016 and 2019, while smoked trout grew 30 percent.

On deli counters, smoked salmon has long featured heavily in uniquely French marketing segments known as "saurisserie" and "traiteur de la mer," comprising a range of value-added salad items from surimi (also a category on its own) to dried, smoked and marinated fish.
