The pendulum appears to be swinging back towards higher prices in the US salmon market, amid reduced availability combined with public holidays this week and last week in Chile.

Prices for D-trim salmon fillets FOB Miami rose to their highest in years at $6.50-7.00 (€5.32-5.72) per pound a month ago as foodservice demand improved, leading suppliers to push fish into the market and retailers to pass on increases earlier than expected.

But no sooner was the high watermark reached than those higher prices began putting a brake on demand, in the process pushing prices back below $5.50/kg
