Though summer months remain highest for oyster demand, with holiday parties and dinners on the town, the succulent shellfish tends to be a favorite for December and January as well.
Sarah Johnson, seafood buyer for Chicago-based restaurant Shaws Crab House, which sells thousands of oysters each week, told IntraFish that during the holiday season, Shaws Crab House goes through more oysters because of holiday parties and catering, but happy hour oysters still bring in a lot of customers.
