US casual dining chain Red Robin is currently in the testing phase of using Atlantic cod for its breaded menu items as part of an effort to ensure a stable supply of products, VP of Menu Innovation and Implementation Steph Hoppe told IntraFish.

Currently, Red Robin uses wild caught North Pacific cod on its Crispy Arctic Cod sandwich, Arctic Cod and Chips, and Red's Nantucket Seafood Scatter, a seafood plate that includes cod fillets.

Hoppe said Atlantic cod is being considered primarily as a hedge against supply disruptions.
