A species that disappeared from the commercial market for 100 years received a warm welcome from customers around the globe this past year during Breviro Caviar' s first year of commercial sales.

Breviro is the only company in the world currently selling caviar from brevirostrum sturgeon,  Breviro Caviar director Jonathan Barry told IntraFish.

The caviar sells for $4,000 per kilogram at the retail level through distributors in Canada, Hong Kong, and five European countries. The price is much higher than the average price of caviar, which Alan Jones, president of the Caviar consulting firm Alan Jones Consulting, told IntraFish is at €2,000 ($2,498) per kilogram at the retail level.
