Salmon from Scottish company Loch Duart was served at the diamondjubilee luncheon given for HM Queen Elizabeth II by the Livery Companies of TheCity of London at Westminster Hall on June 5.

Salmon from the company’s South Uist sites were harvested on the previousThursday, delivered to London early on Saturday morning and filleted and deliveredto the caterer's chef by 7a.m.

About 75 kilogram of its Uist salmon fillets were then marinatedfor three days for the 700 guests.

A similar preparation of our salmon was used for the dinner atBuckingham Palace in April 2011 following the wedding of Prince William andKate Middleton.
