Plenty of folks have wondered why Butch Vidrine left his job as head of seafood for broadline distribution giant Sysco late last year. After all, the Sysco job made him, arguably, the most influential seafood buyer in the world.

“I became a grandfather,” said the 60-year-old Vidrine. Traveling 90 percent of his time gave him little time to enjoy his new grandchild.

That’s when he reached out to his long-time friend Sam Galletti, president of US-seafood firm Great American Seafood, the importing and procurement of parent company Southwind Foods in Los Angeles.

The
