UK retailer Marks & Spencer and London’s Billingsgate Seafood School are teaming up to launch a series of initiatives to help educate chefs, caterers and children about sustainable fish, reports The Retail Bulletin.
The program, which will begin on June 8 and last for three years, will include the development of a specialist outreach project with UK catering colleges to help current and future chefs master their skills in cooking sustainable fish.
“Billingsgate has an unparalleled reputation for developing skills in seafood preparation and cooking, and we’re delighted to be working in partnership with them,” said Hannah Macintyre, fisheries and aquaculture manager at Marks & Spencer.
