For just the third time in a dozen years, the King of American Seafood was from a non-Gulf state and Alaska Chef Beau Schooler was given the honor at the Great American Seafood Cookoff (GASCO) on Aug. 8.
Schooler, who was also nominated for the 2015 James Beard Rising Star award, nabbed the top honor thanks to his Nose to Tail Sockeye Salmon dish, which tried to utilize multiple parts of the fish, including the skin and bones.
“We wanted to present it as an all-fish dish,” Schooler told Seafood International after his win.
