The short supply of King crab this year has put Seattle-based Restaurants Unlimited on a hunt for the hot commodity.

The chain is still looking to buy 15,000 pounds of king crab as it heads into 2012, Restaurants Unlimited Inc. Vice President of Food and Beverage James Nalu Miller told IntraFish. The chain is buying more crab this year due to its 2011 experience, when it sold 15,000 more pounds of crab in its restaurants than in 2010.

This year, the supply of red king crab was short, with Japan buying more than usual and a quota that was slashed by 47 percent.
