Located in brand new premises on the island of North Uist in Scotland is a small enterprise that has carved out a niche for itself in producing top-quality smoked products from farmed salmon, trout and scallops, according to a story in the latest IntraFish Newspaper.

The fish that are used in production grow slowly, around 40 percent slower than other salmon, and the feed has less oil than other feed.

"We smoke our fish by using dried peat from the marshes on the island.

It
