Seafood is a very popular menu item in New York, especially for lunch, David Garelon, executive chef for Waldorf Astoria in New York, told IntraFish.
“It’s definitely an item that seems to be very popular in restaurants, and we’re selling a lot more in banquets,” Garcelon said. He manages several restaurants at Waldorf Astoria's popular location on Park Avenue.
In New York, chefs used to shy away from seafood, including it on menus as more of a substitute for the meat-centered stars for the show, but that Garcelon has seen that change.
