The RockFish Grill & Seafood Market, which opened its doors on May 16 in the heart of Bristol’s dining area, specializes in seafood cooked over a charcoal fire.

Tonks told IntraFish he wants to showcase the best of Brixham, the Devon fishing town where he lives.

“Brixham lands the biggest and most diverse catch of fish in England. There is some amazing fish that is landed there every day, yet more than 70 percent of it currently goes to markets outside of the United Kingdom," he said.
