European smoked salmon processors are predicting yet another volatile year ahead. While high prices are one thing, many producers growing weary of the weekly fluctuating salmon prices, industry watchers told IntraFish.
"The fact of the matter is that we don't have a problem with high prices -- we believe it's an undervalued resource anyway," Lance Forman, owner and managing director of United Kingdom-based Forman & Son's, said.
