“We have been testing it for three years with Costco and it’s been doing really well,” Tourkistas, who is also president and founder of East Coast Seafood, told IntraFish.

The product is already out in Costco Mexico stores under a partner label, Tryst Gourmet. “With the [U.S. launch] we plan to quadruple our output to 250,000 pounds (100 metric tons) per year."
