Few seafood species generate as much excitement and press as Copper River salmon. The wild Alaska fish arrives every May to near-hysteria as chefs and retailers scramble to get the fish to their customers first.

The demand can drive prices as high as $40 (€25) a pound, which opens up the opportunity for huge profits -- but makes cheating a temptation.
