The company, which is based in Tasmania and will produce around 13,500 metric tons of salmon and trout this year, will launch its “Reserve Selection” line in October.

This line of value-added products will be sold mainly online and also in some high-end retail stores, company founder Peter Bender told IntraFish.

The rationale for focusing online for sales is that “most retailers will not be able to carry the full range, so it is easier to sell it online,” said Bender.

It will feature products such as whiskey cured salmon; honey cured hot smoked salmon; hot and cold smoked trout; and a salmon product which is smoked hanging up, instead of on trays, said Bender.
