Deep-skin Alaska pollock fillet block production is nearing levels seen last year, as producers continue to focus on the product form amid a busy Lenten promotion season.

Deep-skin -- a cut that removes the pinbone and the fat line -- is used in products produced by some of the industry's most valuable customers, including for McDonald's for its Filet-o-Fish sandwiches. Seasonal promotional items such as Trident Seafoods-supplied pollock "bites" for convenience store chain 7-Eleven often use deep-skin blocks as well.
