Despite the size of the US seafood market, per capita salmon consumption remains low -- just 2.4 pounds per person. Major farmed salmon suppliers are hoping that by adding new value-added skin-pack lines they can boost consumer demand and, along with it, per capita salmon consumption.

Marine Harvest, which operates processing plants in Dallas and Miami and a department focused entirely on consumer products for the US market, is doubling its Florida capacity and plans to open the new plant in January to meet increasing demand for value-added items, in particular, skin-pack products.
