Aquascot, the dedicated salmon supplier to UK retailer Waitrose, faced unprecedented demand for its products during 2020 as COVID-19 closed foodservice markets, and the company is still riding the wave well into 2021.

The Scotland-based processor benefitted significantly from the uplift in consumer demand from supermarkets and online food shopping, as lockdowns forced the closure of foodservice outlets during the peak of the pandemic.

COVID-19 clearly changed the way people bought online and the group saw roughly a 20-25 percent increase in demand during the peak period, John Housego, managing director of Aquascot told IntraFish.
