US salmon smokers are expecting strong sales over the holidays, and are even expanding capacity to meet growing demand.
Ducktrap River of Maine, part of Marine Harvest, the world’s largest salmon farming company, said it expects excellent sales over the holidays despite a crowded market for products at US retailers.
"We're seeing increased orders for the holidays, and we'll see retail and restaurant sales increase for the holidays," Don Cynewski, general manager of Marine Harvest-owned Ducktrap River of Maine, told IntraFish.
