French diners consumed some 4,550 metric tons of shrimp annually, according to new figures published by seafood trade group FranceAgrimer in conjunction with Gira Foodservice.

Shrimp came out on top in restaurant sales in a survey commissioned by the trade body, which it conducts every three years because of the sheer scope of the project.

The overwhelming majority (95 percent) of shrimp is eaten in restaurants.

Most crustaceans consumed out of home in France (86 percent) are eaten in independent restaurants in a market totaling 9,240 metric tons.
