Demand for sustainable sushi is growing among chefs and consumers alike, according to Lance Schultz, a project manager with US sushi distributor True World Foods.

That's why for the first time, the sushi-grade seafood supplier has entered three products into the Marine Stewardship Council (MSC) Chain of Custody certification program, allowing it to trace its Atlantic surf clam, albacore tuna and sockeye salmon throughout the supply chain to an MSC-certified source.
