Coated pre-cooked fish sales continue to top out-of-home dining volumes in France, according to a new survey commissioned by France Agrimer in conjunction with Gira Foodservice.

The foodservice sector uses some 8,670 metric tons of coated pre-cooked fish annually, with more than four-fifths (81 percent) sold into institutional catering outlets such as workplace canteens, schools, hospitals and nursing homes.

Meanwhile, around 8,590 metric tons of coated raw fish is sold annually, with the remainder sold in restaurants. More than half (56 percent) of coated raw fish products are used by institutional outlets.
