French restaurant diners eat their way through 24,950 metric tons of salmon annually, according to figures published by France Agrimer in conjunction with Gira Foodservice.

Salmon came out on top in restaurant sales in the survey commissioned by the trade body, which it conducts every three years because of the sheer scope of the project.

Some 79 percent of salmon consumed in out of home eateries is eaten in commercial restaurants with the remainder eaten in communal canteens in workplaces, schools hospitals and care homes.
