Oregon sushi restaurant first to carry ASC logo on menu in US
Its new menu includes ASC-certified geoduck raised by Taylor Shellfish.
Oregon-based restaurant Bamboo Sushi will be the first establishment in the United States to carry the Aquaculture Sustainable Council (ASC) logo on its menu.
ASC said Thursday this national debut of its logo coincides with the restaurant introducing a new menu, which includes ASC-certified geoduck raised by Taylor Shellfish served as Yakumi, Sashmi or Nigri.
"Bamboo Sushi has a policy of sourcing fish only from plentiful populations, caught using methods that don’t harm the ecosystem and avoid bycatch, from purveyors that provide full traceability of their product," said the ASC. "It’s therefore not a surprise that you’ll also see the MSC logo -- which accompanies sustainable wild-caught seafood -- on their menu as well."
The restaurant has a long standing relationship with the Monterey Bay Aquarium and additional certifications as well, such as James Beard Smart Catch -- for which they have achieved Leader Status -- and the Green Restaurant Association.
Last year, Bamboo Sushi sourced more than 200,000 pounds of seafood and nearly 80 percent of that volume came from domestic sources, which lowers overall carbon impact.
