French seafood buyers are placing greater emphasis on product presentation in their purchasing decisions, according to leading foodservice supplier R&O Seafood Gastronomy.

While price and quality of service are important considerations, French buyers are becoming increasingly demanding, meaning there is more of a market for portions, fillets and ready-to-cook options, Eric Bernard, R&O’s director of Quality, Innovation and Production, told IntraFish.

“You need to be able to offer solutions to make work in the kitchen as easy as possible,” he said.
