There is a sense of optimism among Europe’s smoked salmon smokers with Christmas once more just around the corner, with most operating at full capacity and successfully managing the high raw material prices.

“The sector in general is very confident and very busy,” Pierre Commere, general secretary of France’s Association Des Entreprises de Produits Alimentaires Elabores (ADEPALE), told IntraFish.

Overall the supply and pricing of the raw material is “still less crazy than it was in 2017,” said Commere, and while the prices are still very high they are “more or less the same, on average” as last year.
