Idaho-based Clear Springs Foods may be best known as the world's largest producer of rainbow trout, processing more than 20 million pounds a year for mostly domestic consumption.

But it's always looking at ways to expand in the seafood industry, and the group has diversified operations to include processing additional species beyond trout, Jessica Henry, Clear Springs Foods' marketing director, told IntraFish.

Clear Springs' strategic shift is in large part a response to overarching consumer trends, Henry said.
