At the Norway-UK Seafood Summit on Jan. 22, representatives from the retail landscape were keen to discuss how major trends are shaping the industry, with many focusing on how shoppers are moving towards ethical and sustainability considerations in their purchasing decisions.

Ian Wright, CEO of the Food and Drink Federation, said among the two key trends are the rise of discounters such as Lidl and Aldi, alongside the rise of the online shopping and direct-to-home delivery.

"After supermarkets became commonplace, we had a period of relative stability," he said.
