While a second wave of recovery appears to be underway, changes in US demographics will fundamentally shift how seafood companies serve their companies, Nielsen Perishables Group President Bruce Axtman, keynote speaker at the IntraFish Seafood Investment Forum in New York City, told attendees.

Of the demographic changes, most important, perhaps, is the shift in racial demographics. While white, non-Hispanics made up some 65 percent of the population in 2010, by 2050 it's projected to be less than half the US populations, putting new pressures on manufacturers to innovate in flavors and concepts to serve a non-homogeneous audience.
