Standing in the middle of Taylor Shellfish’s farm in Shelton, Washington -- about 80 miles southwest of seafood hub Seattle -- during low tide, oysters dot the ground for as far as the eye can see.

The Chapman Cove farm, which sits on Western Washington’s Oakland Bay, is chock full of Kumamoto oysters. The farm produces about 3.6 million of the species per year– but there’s more to the shellfish farm than meets the eye. Under the layer of oysters is another layer of Manila clams, about 500,000 pounds total throughout the farm, both species growing in harmony and waiting to be harvested together.
