Fledgling Colombian trout producer Emerald Trout is aiming to capture a slice of the $200 million (€165 million) US market for trout imports, as well as other major international and niche markets.
The firm, founded in December 2020, is also looking to European and Asian markets: Japan in particular is coveted for specialty products by producers.
To do this Emerald plans to expand rainbow trout production at its recently acquired production and processing site in Colombia seven fold to 1,000 metric tons a year within five years.
