Cell-based agriculture startup firm Wildtype has unveiled a "sushi-grade" salmon line.

The product has been developed with the sushi industry's favorite raw salmon applications in mind.

As with Wildtype's earlier batches, this salmon sushi is made with genuine coho salmon cells, grown in a brewery-like system.

The company is pushing the product's sustainable and transparent supply chain credentials.

"We're creating sushi with cells from one of the world's favorite fish, without needing to take fish from the ocean," Wildtype's Chief Scientist Arye Elfenbein said.
