The global surimi landscape is shifting rapidly, with the United States suffering from a weaker Alaska pollock season, Southeast Asian countries strengthening their activity, and Russia planning big shifts in its production, IntraFish learned during the 11th Surimi School Europe in Madrid.

Generally, world surimi production is stable, with projections of around 830,000 metric tons per year, Future Seafood Founder Pascal Guenneugues said.
