At first glance, Balfego’s mandate appears simple – to bring fresh bluefin tuna to their worldwide customer base all year around.
However, the fishing season for these tuna is only one month long.
To get around this, Balfego operates an intricate system of catching the fish and placing them in sea cages. The period it keeps them there for is partly defined by customers’ specific fat levels requirements (Japan prefers 8 percent fat content while U.S. buyers want 12 percent). The bluefin in the extensive cage system are carefully monitored and fed to ensure the fat content is kept at specified levels.
