Working for the sourcing arm of one of the UK's largest processors and retail suppliers, Sea Farms' Sarah Hussey knows all too well the pressures of sustainability in the UK market.

"Retailers have all kinds of sourcing commitments," Hussey told IntraFish. "We want to do the right thing, but down the chain it is harder."

As such, the company, which supplies the likes of Marks & Spencer and Sainsbury's, and, until recently, Tesco with shrimp, squid and other shellfish, has, through its parent company SeaFresh, taken control into its own hands.
