Donelson Berger is Clean Seas Seafood's only US-based employee, and he has a daunting task ahead of him: to convince American chefs why they should pay $7.00 (€6.11) to $8.00 (€6.98) for a whole fish that is relatively unknown to American consumers.

Berger, who joined the company in September, told IntraFish the premium, sustainable aquaculture market is a growing area for US chefs and consumers, and yellowtail kingfish fits right in with this trend.

"It all ties into the advent of the premium branded fish in the United States," he said of the company's rebranded Spencer Gulf Hiramasa Kingfish.
