AMP Saumon de France, the niche market French salmon and trout producer, is launching a project using fish waste to grow vegetables, an operation that could serve as a model for eventual franchising of the concept.

The project, based in Cherbourg-en-Cotentin in France's northwestern Manche region, uses nutrients from juvenile fish waste to fertilize plants grown under glass roofs.

After five years of research and development work on the first project, Saumon de France is planning to launch a second at nearby Tourlaville.
