Post pandemic restaurant menus are different and that has implications for seafood suppliers

The numbers are staggering: More than 110,000 restaurants in the United States closed for business—temporarily or permanently—in 2020; 2.5 million jobs in the sector evaporated from pre-pandemic levels; and US foodservice sector sales fell by $240 billion (€224 billion) in 2020 from an expected level of $899 billion (€839 billion).

And the pain isn't over. While most restaurants in the country have reopened for in-person dining, inflation, supply chain disruptions and labor issues continue to alter restaurant operations -- especially when it comes to menus.
