As restaurants topple, this sushi chain has plans to expand

While a good number of those in foodservice are shuttering their doors or struggling to stay afloat, one restaurant chain is actually in the midst of opening more sushi locations in 2021.

The Flagship Restaurant Group has 19 establishments around the United States, 14 of which are its Blue Sushi concept.

“We’re on pace to open 7-8 next year, six of which are Blue Sushi,” said Tony Gentile, corporate executive chef and owner of the Omaha, Nebraska-based group.

“This is either going to be our smartest decision or not the most intelligent one.”
