Miami and Denmark-based Atlantic Sapphire, the most prominent example of just how bullish investors have become, now boasts a market cap of a stunning $771 million (€700 million).

For perspective, Atlantic Sapphire is, according to IntraFish's upcoming ranking of the world's largest seafood companies, the 15th most valuable stock listed salmon company. That's more valuable than Chilean salmon farmers Multiexport, Blumar, Invermar and Salmones Camanchaca.
