Gigha Halibut, a land-based producer of sustainable Scottish Atlantic halibut in the inner-Hebrides, is looking at ways to add value to its already incredibly valuable products.

The company currently produces about 75 metric tons of Atlantic halibut per year and has plans to ramp up production to 150 metric tons in the coming years.

Farming the niche species is a slow task, but when it reaches commercial stage the payback is significant.

“It is not enormous volumes but it’s a niche product; a signature dish,” Alastair Barge, director of Gigha Halibut, told IntraFish.
